The ribs were squared up very nicely for St Louis Style cut, but they contained more belly meat than I was hoping for on the top side of the rack. This meant that on top of rib meat, there are some parts of fat that wouldn’t render. This isn’t shown in the listing pictures as they only provide the underside of the ribs.
An example of ribs without the extra belly would be Costco’s spare ribs, as shown in the last picture I attached where I’ve trimmed their spare ribs into a St Louis Style cut.
Also, the difference between this 1.8kg product and the 1kg product is that this one contains all of the ribs, including short ones, whereas the 1kg contains the 6-7 biggest. I’d personally go for just the 1kg option to end up without short ribs in the rack.
This is a stable in my house now for low and slow smoking. Kids always come over when i tell them i smoking them. great cold too for lunch if there are any left.
