The ribs were squared up very nicely for St Louis Style cut, but they contained more belly meat than I was hoping for on the top side of the rack. This meant that on top of rib meat, there are some parts of fat that wouldn’t render. This isn’t shown in the listing pictures as they only provide the underside of the ribs.
An example of ribs without the extra belly would be Costco’s spare ribs, as shown in the last picture I attached where I’ve trimmed their spare ribs into a St Louis Style cut.
Got 2 of these and they are full of meat. Best ribs i have had the pleasure of smoking yet. Plenty of meat on the bones. Already working out when I can fire up the smoker to do more.
